On the second Friday of the month of August, “National Chipa Day” is celebrated in our country; the traditional food that characterizes us and accompanies us in numerous celebrations such as Christmas and Easter. Sarita Garofalo, renowned national chef and Country Brand Ambassador, tells us about the importance of celebrating and remembering this date.

This August 9 in Paraguay, National Chipa Day is commemorated, to reaffirm and honor one of the most emblematic and traditional foods of Paraguayan gastronomy. Chipa, a delicious mixture of cassava starch, cheese, eggs and fat, represents a symbol of national identity and a cultural legacy that transcends generations.

Chipa has its roots in precolonial times, when the Guaraní already prepared a similar dough with cassava. With the arrival of the Spanish, new ingredients such as cheese and eggs were introduced, giving rise to chipa as it is known today. This food has accompanied Paraguayans throughout their history, becoming a symbol of hospitality and unity.

In commemoration, Sarita Garofalo, who is the Ambassador of the Paraguay Country Brand, organized, at the Garófalo Center, a keynote talk to show the different types of chipa, its preparation and historical context.

Among them, the following were prepared:

  • Rice chipa from the Lopez era
  • Stuffed corn chipa apua
  • round chip
  • Chipa mandi'o
  • Chipa chuchita
  • Classic starch chip.

During the event, those present asked numerous questions and were able to taste the typical food of our country.
